  • Floor Drains: Look for standing water around the drain grates. If the water is oily or has a grey sheen, the grease trap is backed up.
  • Ceiling Tiles: Look for brown water stains or bowing tiles directly above the hot well line. That’s condensation from poor HVAC.
  • Smell: A clean buffet smells like steam and hot metal. If you smell anything sour, musty, or like rotten eggs, that’s sewer gas coming from a floor drain or a failed vacuum line check valve.
  • Plate Temperature: Touch the side of a chafing dish pan. If it’s just warm to the touch and not hot, the hot well water bath is below 140°F. Do not eat from that pan.

Sanitation on a Yangtze River cruise buffet is not about the white tablecloths or the uniformed servers. It’s about the heat pump loop temperature, the condensate air gap, the vacuum system check valves, and the grease trap flow restrictor.
